Tell us a bit about Blackthorn Salt?
Astonishingly made on the only working Thorn Towers in the world, Blackthorn Salt comes directly from the wind, sea and thorns on the West Coast of Scotland.
At Blackthorn, every crystal comes from pure seawater, gathered locally and evaporated on the Graduation Thorn Towers. These beautiful structures harness the power of coastal winds and sun to dry off 90% of that water. Then, in the Pan House, our Salters skilfully and patiently work to ensure that, as the crystals grow, they capture a balance of other elements too – such as magnesium, calcium, potassium and tannins – which have an important impact on the taste.
We simply enjoy being surrounded by people who care about good food and how it’s made.
Blackthorn Salt has a flavour profile that is mineral-rich and bittersweet: it echoes the sea, but there is also a unique depth and mellowness that respects and elevates flavours, allowing them to resonate with a lasting sensation of moreishness.
Proud winner of the Golden Fork for Scotland and a rare 3-star Great Taste Award, Blackthorn Salt is organically approved and the salt of choice for many Michelin-starred restaurants, chefs, delis, farm shops and home foodies.

Come and taste Blackthorn Salt for yourself and discover the remarkable difference a salt can make to food. Thanks to our gentle salt-making methods, each crystal retains around 6x more minerals than most salts — calcium enhancing sweetness, potassium sourness, magnesium bitterness and sodium saltiness. As the seawater trickles slowly through the Tower, it also draws tannins from the blackthorn branches, bringing a distinctive earthy umami note. Together, they work across all 5 basic tastes, not simply adding saltiness, but bringing balance, depth and a wonderful moreishness to food.
And while you’re tasting, take a closer look at our miniature working model of the Thorn Tower! Watch the water trickle through and see our unusual salt-making method in action. It’s a tiny version of our majestic Thorn Towers, offering a fascinating glimpse into how the West Coast wind, sun and blackthorn work together to create Blackthorn Salt..
